Bread

My new found hobby ever since I visited my sister in Westcliffe is baking bread! It is really fun, and tastes very good, but not so great for the diet....but overall I think home cooked meals ae better than going out to eat, even if they do consist of bread. :) So, first I made home-made hamburger buns (not-pictured) for sloppy joes, then I made turkey sandwiches with them for work. Delicious. Yesterday I made cinnamon rolls for breakfast, perfect with an egg and a cup of coffee!

Last night I made sourdough bread with the starter Ryan gave me. The dough didn't rise very well, but afer consuting with my sister I realized it was supposed to be in a warmer spot, not right by and open window with a cool rainy breeze.  So I moved it to the warm oven, let it rise for an hour then baked it. It turned out very well. We had the bread with beef and barley soup. And tonight that bread will be used for some BLTs

Weekend in Westcliffe

This weekend Nana, Jackson and I took a trip to Westcliffe. We were able to go to Leanne and Ryan's property, the drive was a little scary down the side of the cliff but we made it.
Emma even found her first sign of fall...a golden aspen leaf,

 


  We stopped at the park for a picnic and played on the playground. Then, we went back to Leanne's and made Tramasu with homemade Lady Fingers, and homemade hot dog buns for our brauts. I never knew you could make such things. Ryan also gave me a sourdough bread starter so I can make my own sourdough bread. He doesn't think I can keep it going 'til Thanksgiving, but I like the challenge!  Hopefully I can do it!







 Mason had a lot of fun playing with Nana!

 We also went to Uncle Bruce's football game. Lynn got all the cousins matching Custer County Bobcats shirts. They were the biggest fans...they took turns playing, sleeping and crying during the whole game.
 After the game we spent the night at the May house, it was nice to spend time with Lynn, Bruce, Marylin, Jeb, Karly and Sidney! (They even took me T.P.ing with them-keeping me young)

6 Months

Happy 6 Months Today!!! You are 1/2 a year old now, I can't believe how fast these six months have gone!!!




At 6 months, Jackson, you:
~ retired the Bumbo seat. You have figured out that if you turn sideways you can stick your leg out far enough to touch the counter top. Then you figured out how to make that chubby little leg scoot the Bumbo right across the counter top. Hello high chair...we can strap you in and keep it in one spot.


~ eat cereal, apples, bananas, peaches, carrots and sweet potatoes.....which are your favorite.

~ sleep on your side, sucking your thumb, and occasionally sleep through the whole night

~ like to hold your own bottle

~ sit up and roll over like a pro

~ scoot backwards when you are laying on your tummy

~ like to "figure out" your toys and all the things you can do with them

~ like to touch faces and pull hair

~ turn into a shy boy sometimes and smile, then bury your face into our shoulder

~ laugh, smile, and giggle all the time
~ get excited when you see Mommy and Daddy, and you bring us so much joy every time we see your cute little smile.

Domesti-Kati

Today was going to be such a nice day so I wanted to have mom over and have a nice dinner out on the patio. It turned out to be a rainy afternoon, but we still grilled out in the rain and had a very nice gourmet dinner, made by "Domesti-Kati"!

The Menu:
Appetizer
Caprese Skewers
Entree
Grilled Salmon and Shrimp-for Mom and Kates
Top Sirloin-Chris
Sweet Potatoes-Jackson
3 Bean Salad
Dessert
Tiramasu
Caprese Skewers
cherry tomatoes
fresh mozarella balls
fresh basil leaves
balsalmic vinagrette
Place first 3 ingredients on a toothpick. Drizzle with 4th ingredient.


Tiramasu
2 T instant coffee
1 T sugar
1 c boiling water
1 pkg. non-fat cream cheese
1 tub non-fat cool whip
1/4 c sugar
2 pkgs. lady fingers
unsweetened cocoa powder

Dissolve instant coffee and 1 T sugar in boiling water. Mix together cream cheese, 1/4 c sugar, cool whip until fluffy. Layer lady fingers in the bottom of 8x8 dish. Pour half of the coffee mixture over lady fingers. Spread half the cream cheese mixture on top. Repeat lady fingers, then coffee mixure, then cream cheese mixture. Sprinkle cocoa powder on top and chill before serving. Enjoy!
